Ingredients:
1 1/2 pound(s) scallops |
1 bunch(es) asparagus bite size chunks |
1 box(es) mushrooms bite size chunks |
1/4 cup(s) chicken broth |
1 teaspoon(s) tarragon |
1 tablespoon(s) butter |
4 teaspoon(s) parmesan cheese grated |
Directions:
1. Cut mushrooms and asparagus in bite size chunks and place in stove top saute pan; add chicken broth, tarragon and butter. Cover and cook on medium high for 6 minutes, stirring occasionally; add scallops and cook for 3 to 4 more minutes or until tender. Top each serving with one teaspoon grated parmesan. Optionally, over rice, pasta or couscous. Serve with strawberries. |
