This is barely a recipe, but I have never seen potatoes cooked this way before, and I wanted to share! I eat this nearly every morning because it is quick, has minimal clean-up, and we always have at least one egg and potato lying around. Read more . Ingredients:
1 tablespoon olive oil
1 potato (any kind really, red, fingerling, gold, whatever is closest)
1 egg
salt+pepper
Directions:
1. Heat oil in medium frying pan until hot. Meanwhile, cut potato into 1/8 of an inch slices, sort of like a thick potato chip. Fry the potatoes until they are golden brown on both sides and add salt. This should take between 5 and 10 minutes, depending on the thickness of the slice and how hot the pan is. Use a fork to pierce a potato slice to check doneness if unsure.
2. Set the potatoes aside and use the already hot pan to fry an egg. To get the perfect egg-over-easy without the uncooked egg white you will need to cook the egg in the pan until it is almost done, then place a pot cover over the pan to steam the top of the egg. This is also a good trick if you are in a rush. Leave the top on for 30 seconds, then check the whites. Add salt and serve with potatoes!
3. This can be adapted for an egg scramble by adding onion to the potatoes, mushrooms, fresh tomatoes, and cheese. Yum
