This is a very easy dish to prepare. Goes great over crunchy chow mein noodles. Ingredients:
6 tablespoons olive oil |
1 lb boneless skinless chicken breast half |
1 (16 ounce) package frozen green beans |
1 (16 ounce) package frozen mixed vegetables (cauliflower, carrots, broccoli, etc.) |
1/2 teaspoon hot pepper sauce |
Directions:
1. In a large skillet heat 2 tablespoons of the olive oil on medium high heat. 2. Add the chicken and cook, turning, until golden on both sides and white throughout, about 10 minutes. 3. Remove to a plate. 4. Add the vegetable to the pan. 5. Cover and reduce the heat to medium. 6. Steam the vegetable about 10 to 15 minutes, or until thawed and hot. 7. Add the remaining 4 tablespoons of olive oil to the skillet along with the hot sauce. 8. Cook, stirring often, until hot, about 2 minutes. 9. Return the chicken to the pan to heat through. |
